Even though spring is around the corner, it’s still very much soup weather around here. Today I’m sharing an easy DIY soup board that will make your next soup night just a little more special.
Some nights you just need a good bowl of soup.
Especially on those cold, grey, rainy days where it seems like you cant warm up no matter how many sweatshirts or blankets you put on.
I like to put some sort of soup in our weekly meal plans because it’s always an easy one pot meal that seems to make everyone happy. To make soup night just a bit more special, I decided to repurpose our hot chocolate bar tray to create a DIY soup board with all the accompaniments that might go well with a steamy bowl of soup.
This is an easy DIY project that only requires shopping your house and arranging items on a tray. Easy peasy!
Here’s a few ideas for adding to your winter soup board:
- jars of crackers
- croutons
- basket of bread or breadsticks
- fresh herbs
- flaked sea salt (I like Maldon)
- Pepper grinder
- extra virgin olive oil
- spoons
- wide soup mugs or bowls
- cloth napkins
What makes this special is grouping all the items on a large tray. It’s one of my favorite organizing tricks for making a random collection of items look cohesive. Here’s the link to my tray from Target.
I mean, it makes even a simple weeknight dinner feel extra special.
One of our favorite soups is tomato soup and we’ve create our own version that is gluten free, dairy free and super easy to make on a busy weeknight. It also tastes amazing with a grilled sandwich or side salad.

The Easiest Homemade Tomato Soup Recipe (gluten free, dairy free, vegan)
Ingredients:
2 – 28 ounce cans of fire roasted diced tomatoes (we like Muir Glen brand)
1/2 teaspoon ground cumin
1 medium onion, diced
1 can of coconut milk
olive oil, salt and pepper
Directions:
Saute onion in olive oil until translucent. Add cumin and cook for 1 minute. Add tomatoes and coconut milk and heat until boiling. Simmer for 5-10 minutes, then blend with an immersion blender until smooth. Season with salt and pepper. To serve, add a swirl of olive oil, a sprinkle of sea salt and gluten free crackers or bread on the side.
